Octopus Festival - Pozzillo - Sicily

The Octopus Festival is an annual celebration in Pozzillo, a seaside village near Acireale. It usually occurs in July during the Saint Margaret festivities and attracts thousands. The festival, centered in Piazza Santa Margherita Regina, offers food stalls with fresh octopus salad, boiled and grilled octopus, and other seafood, paired with local wine and music. It is a key event in Pozzillo’s summer, honoring the maritime traditions of the Sicilian Ionian coast.

The Pozzillo octopus salad, central to the festival, showcases ancient roots and captures Pozzillo’s authentic culinary spirit. Boiled octopus is topped with *salmoriglio*—a sauce crafted from olive oil, lemon, and local herbs—prepared with the area's traditional recipe to highlight the dish's genuine flavors. It pairs wonderfully with Etna white wines, which flourish in this volcanic terroir. Coinciding with Saint Margaret’s patronal feast, the Octopus Festival offers a rich experience combining culinary tradition, spiritual celebration, and social gathering. Visitors can dive into the core of Sicilian maritime culture and see how a simple octopus symbolizes the community.

Sicilian octopus salad features fresh octopus, celery, and green olives. It takes about 40 minutes to cook, then is dressed with oil, lemon, and parsley. Ingredients include: 1 kg fresh octopus, 1 stalk of celery with leaves, 1 carrot, 100 g green olives (preferably pitted), enough extra virgin olive oil, juice of 1 lemon, chopped fresh parsley, and salt and black pepper to taste. To prepare: Rinse the octopus thoroughly under running water, cleaning the internal pocket and mouth. Immerse the octopus three times in boiling water to curl the tentacles, then cook it with the carrot and celery for approximately 40 minutes. Allow it to rest in its cooking water until tender. Drain and cut the tentacles into pieces, slicing the head into strips in a large bowl. Add chopped celery, green olives, parsley, salt, pepper, olive oil, and lemon juice. Refrigerate the salad for a few hours before serving. Optional: You can add boiled potatoes, and create an alternative marinade with white vinegar or wine.
