Puglia is regarded as an ultimate pasta destination because of its significant production of durum wheat and its tradition of crafting handmade pasta, particularly the famous ear-shaped orecchiette. This type of pasta is commonly served with local vegetables, such as broccoli rabe, or in dishes that reflect the region's cucina povera (peasant cooking) tradition, which emphasizes the use of fresh, seasonal ingredients. Lecce, often called ‘The Florence of the South’, embraces tradition like no other region in Puglia. Locals are proud of their home-style cooking, using locally sourced ingredients and adhering to age-old recipes. Le Zie Trattoria offers a warm, inviting atmosphere reminiscent of dining at a nonna’s home, featuring walls adorned with eclectic art and tables dressed in checkered tablecloths. L’altro Baffo, Otranto

Chef Cristina Cante, who grew up in her father's restaurant, now runs her own seafood establishment in the historic heart of Otranto - L'altro Baffo. Her dishes highlight the essence of the sea, with her sea urchin carbonara becoming an iconic favourite in Salento. Cante offers a five-course tasting menu for €65, featuring the freshest ingredients of the day. Pair your meal with a bottle of locally produced white wine from their curated cellar for an enhanced experience. L'altro Baffo's signature dishes are the carbonara with sea urchins and the raw fish platters.
