Agriturismo Poggio ai Santi - near Livorno /Grosseto

Poggio ai Santi in Tuscany offers a unique blend of rural hospitality with suites, a campsite, a farmhouse bar, and a restaurant. Once a hunting lodge, this sustainable destination prioritizes land and hospitality, using ingredients from its garden to emphasize biodiversity and sustainability. Francesca Vierucci and her son Giulio Neri run the farm, which began in the 1980s after they fell in love with the location. They transformed the La Muccheria ruin into a hospitality business and, despite challenges, established an organic farm in 1996, marking a new era in their journey. The family home became the heart of the relais, which opened its restaurant to outsiders in 2005. The project has since expanded to include suites, apartments, and luxury tents, with a small spa set to open soon. Francesca named it Poggio ai Santi to honor the area's rich history of saints. 

The team at Poggio ai Santi consists of 40 to 50 people, and finding dedicated professionals remains a challenge. The business has grown organically, linked to farms and a brewery run by her son, Francesco, along with various social initiatives. "Tourism allows me to pursue my true passion: agriculture," Vierucci stated, noting that she is happiest in the fields. Poggio ai Santi practices sustainable agriculture by respecting natural cycles, using free-ranging animals, and maintaining a short supply chain. They work closely with the kitchen to harvest fresh ingredients and utilize an 85-meter-long bioactive tank to regenerate soil. Biodiversity is essential, featuring traditional Tuscan species and collaborations with the CNR to preserve ancient fruits and vegetables, such as the Livorno pepper. 


Il Sale is Poggio ai Santi's gourmet restaurant with a panoramic terrace overlooking the gulf. On clear days, diners can view the islands of Elba, Gorgona, and Corsica. Francesca Vierucci notes that integrating with the surrounding area helps prevent the restaurant from becoming a "desert cathedral," and they exclusively use products from their farm, starting with their olive oil served with bread. Chef Michele Bisanzio crafts seasonal dishes with a clear, Tuscan-based style. Three tasting menus are available: "Roots and Future" (seven vegetarian courses, €75), "Natural Rhythm" (seven meat courses, €90), and "Omnia Piscis" (by reservation only, €120), which explores various fish dishes. Menu highlights include tomato tartes tatin, buffalo mozzarella stracciatella, and grilled pigeon with cibreo ragù. Sal8, Giulio's kingdom, started over ten years ago in a garage as a farm bar. It crafts unique cocktails from seasonal ingredients like fresh figs, tomatoes, and herbs. The outdoor veranda offers an American-style barbecue with grilled meats such as beef ribs, pork spareribs, and T-bone steaks, alongside comfort food and dishes made from garden-fresh produce.
