Dessert of the day: delicious and easy to make Pistachio Tiramisu

Not just quick and easy to prepare but also quite a stylish dessert: Pistachio Tiramisu!  It is a delicious, fragrant and colourful creamy after-dinner dessert that all your guests will love!  The list of ingredients needed to make this spoon dessert is particularly short, in fact you will only need four main ingredients, and the Final touch is given by a sprinkling of chopped pistachios.

Ingredients:

250 g ladyfingers; 500 mascarpone; 3 eggs

200 g pistachio cream; 80 g pistachio grains

160 g sugar; coffee (4 cups)

Preparation:

1. Prepare the coffee with a classic caffettiera/moka and let it cool. To prepare a tiramisu like this for about 8 people you will need 4-5 cups of coffee. 2. Divide the yolks from the whites and then put the yolks in one bowl and the whites in another. 3. Pour the sugar into the bowl containing the yolks. 4. Mix the egg yolks with the sugar using an electric whisk until the mixture is soft and frothy. 5. Add the mascarpone and pistachio cream to the bowl with the egg yolks and sugar (you can find the recipe for making pistacchio cream here). 6. Mix the egg yolk cream, mascarpone and pistachio well until all the ingredients are well blended.  7. With the help of a whisk, whip the egg whites; the egg whites should obtain a rather compact consistency. 8. Once you've whipped the egg whites well, combine them with the other ingredients in the bowl. Work the compound by turning from bottom to top so as not to disassemble the egg whites too much. 9. Pour the coffee into a deep dish and dilute it with a few spoonsful of water. 10. Start dipping the ladyfingers in the coffee, dip one ladyfinger at a time in the coffee for very few seconds. Be careful not to soak the ladyfingers too much in the coffee because you risk getting a soggy tiramisu.13. Then continue with a layer of ladyfingers and one of cream up to the Top of the pan. 14. Sprinkle the surface of the dessert with a layer of chopped pistachios, let the dessert rest in the refrigerator for a couple of hours and then you can enjoy your pistachio tiramisu!
