Torta Pardiso con Fragole - the last minute solution for a spectacular fresh cake

Pastry chef or not, with this recipe you are never wrong. With easy-to-find ingredients for this last-minute fabulous fresh cake. Some flavors and smells have always been very popular. One of these is certainly the timeless combination of strawberries, lemon and fresh cream all wrapped in a soft dough. The preparation is very simple and fast and if some ingredients such as strawberries are missing , they can be easily replaced with other fruit. The same alternative can be had for the lemon cream and also for the cream. For example, instead of lemon cream you can use a fruit jam and for the cream you can cover the cake with melted chocolate.

The recipe shown here will make one of the perfect cakes for last minute occasions, hitting the goal with a versatile and perfect dessert for every palate.

Ingredients for the base

4 eggs

250 g of flour

100 g of sugar

A glass of seed oil

Half a glass of milk

A sachet of baking powder

Ingredients for the filling

2 eggs (one whole and one yolk)

120 g of sugar

40 g of potato starch

250 g of water

the peel of two grated lemons

the juice of one lemon

strawberries and cream for decoration


Start preparing the cake by mixing the eggs and sugar; whisking for a few minutes to create a well blended cream. Then add the oil, the milk, continue to mix and finally gradually, add the sifted flour and the baking powder. Continue mixing  until you start to see the air bubbles which indicate that the dough is ready.

Prepare the chosen cake pan with a thin layer of butter and finally flour and pour the dough ready to be baked. Cook for about 30 minutes at 180 ° C and test the cooking with a toothpick.

As soon as the base of the cake is ready, let it cool well, cut it into one or two layers and move on to preparing the filling. It will be important to add the hot cream to make it adhere well to the sides of the cake. Take all the ingredients of the cream, and mix them well with the  electric mixer. Then take the mixture and transfer it to a saucepan over medium heat and turn slowly. Gradually the cream will begin to thicken and when it reaches the right point pour it directly onto the cake disc to be filled and assemble the cake at the end. Leave to rest for at least 30 minutes in the fridge and proceed with the strawberry and cream decoration.
